This light flavourful sauce using simple ingredients, does not skimp on taste. It’s one of those healthy recipes that you love to collect because it has lots of flavor.

Ingredients Required

Pork Tenderloin: you can use bone-in pork chops, bone-in pork loin chops, thick center cut pork chops or boneless pork chops.

Fresh Garlic: garlic cloves give that flavor. You can use garlic powder if you need to, yet fresh gives the best results

Chicken Broth: chicken stock allows the pork to be juicy and tender, and prevents drying out. Also provides flavor.

Olive Oil: for cooking, you can also use vegetable oil, avocado oil or spray.

Seasonings: Salt and black pepper to keep it simple.

Lemon: lemon juice and lemon zest give that acidic taste.

Fresh Parsley: the final touch of flavor and color.

Recipe Instructions

In a large skillet over medium heat, add the 1 tbsp olive oil.

Season pork chops with salt and pepper generously on each side.

Place into skillet, and cook over medium-high heat for about 2-3 minutes without moving them while they cook.

Turn them over and cook another 2-3 minutes. There is a total cook time of less than 15 minutes.

The pork chops will have a nice crust and be golden brown yet tender on the inside.

At this time pork should reach 145 degrees F. using a meat thermometer (or instant-read thermometer). This is the internal temperature pork should be, to be consumed.

I like to go by temperature and not look, as some pork will look pinker than others despite being cooked or not.

Remove from the stovetop, and place pork chops onto a large plate.

Place the skillet back on the burner, add ½ tbsp olive oil and heat over medium heat.

Add garlic and saute for 1 minute. Add chicken broth and bring to a simmer.

Allow to simmer for 5 minutes, occasionally stirring. Remove from heat.

Add lemon zest, lemon juice, and parsley. Stir until combined.

Spoon sauce over the top, and enjoy these best pork chops ever!

How to Reheat Pork Chops:

Reheating causes food to dry out, especially pork chops or thinner chops. The sauce or broth for this recipe prevents this, so this recipe reheats beautifully.

If using the microwave, I like to cover lemon pepper pork chops with a damp paper towel during reheating, and I haven’t experience dry pork chops.

Whether freshly made or reheated to enjoy the next day, always have juicy pork chops – and especially moist and tender pork chops.

Ingredients

  • 1 tbsp olive oil + ½ tbsp
  • 1 pound pork tenderloin, cut into 8 medallions
  • 3 garlic cloves, minced
  • 1 cup low sodium chicken broth
  • 1 lemon, zested and juiced {both set aside}
  • 1 handful fresh parsley, roughly chopped
  • salt
  • ground black pepper

Instructions

  1. In a large skillet over medium heat, add the 1 tbsp olive oil. Season pork medallions with salt and pepper generously on each side. Place into skillet, and cook over medium high heat for about 2-3 minutes on each side {pork should reach 145 degrees F}.
  2. Remove from skillet and let rest on a large plate.
  3. Place the skillet back on the burner, add ½ tbsp olive oil and heat over medium heat. Add garlic and saute for 1 minute. Add chicken broth and bring to a simmer. Simmer for 5 minutes, occasionally stirring. Remove from heat.
  4. Add lemon zest and juice, and parsley; stir until combined.
  5. Serve pork medallions and spoon sauce over the top.
  6. Enjoy!
